🛠️⚗️ Dettagli di lavorazione, Vinificazione Le uve, separatamente, sono raccolte manualmente in cassette da 20 kg e stoccate a 10°C in cella frigo prima della pressatura soffice. Il mosto fiore di Pinot Nero (resa del 45%) viene fatto fermentare in acciaio a temperatura controllata, mentre il mosto di Chardonnay fermenta in barriques e li vi rimane per 4 mesi. Dopo l’assemblaggio il vino base rimane sulle fecce fini di fermentazione fino al tiraggio effettuato la primavera successiva alla vendemmia. Permanenza sui lieviti: almeno 8 anni Affinamento: almeno 6 mesi dalla sboccatura Dosaggio: non dosato
