Questo vino – che deve il proprio nome al celebre dialogo platonico – è elegante e profumato, con sentori richiamano un bouquet di fiori bianchi, note di frutta esotica e un accenno al caffè e al cacao tostato. Al palato si presenta fresco ed equilibrato, primeggiando in persistenza e sobrietà. Piacevolmente sapido, è un concentrato di mineralità mediterranea. Sicilia Tenuta Pianetto, Santa Cristina Gela, Palermo (PA) Cresce su suoli a medio impasto e argillosi, ricchi di minerali ad un’altitudine di circa 650 m s.l.m. Grillo biologico Dopo un’accurata selezione delle uve si procede con la pressatura soffice. La fermentazione avviene in vasche di acciaio a temperature controllate per 4 mesi, l’affinamento invece sui lieviti in vasche di acciaio per 6 mesi e poi in bottiglia per circa 2 mesi. Dal colore giallo paglierino tenue, il nostro Timeo presenta sentori agrumati e floreali, con note di melone, lavanda e ginestra. Al palato è morbido e fresco, con un’ottima persistenza e una buona mineralità. È il vino ideale da accompagnare ad antipasti a base di pesce e molluschi e si sposa bene con i primi piatti a base di carne. 7 °C 750 ml 0,13 DOC, Biologico
