TIPOLOGIA DEL TERRENOTerre rosse, ricche di ferro e povere di materiale organico, sabbiose, ciottolose e poco permeabili.
VINIFICAZIONEDiraspatura e pigiatura a rulli. Macerazione e fermentazione a temperatura controllata di 20-25 °C in acciaio inox per circa 7 giorni con frequenti délestages. Svolti tutti gli zuccheri, continua la macerazione per altri 7 giorni, questo per l’estrazione ottimale dei tannini, importantissimi nella successiva fase di invecchiamento. Segue la svinatura. Viene poi aggiunto alcol da vino fino a 18% vol., mistella fino al grado zuccherino desiderato e mosto cotto.

PROFUMONote bilanciate di mandorla tostate, fichi secchi e uva passa e delicati sentori di vaniglia e legno.
ABBINAMENTIServito con formaggi a pasta dura costituisce un abbinamento molto interessante. Eccellente con frutta secca e dolci a base di ricotta.
SAPOREMorbido, secco e leggermente speziato.
INVECCHIAMENTOInvecchiamento di oltre 60 mesi in fusti di rovere di Slavonia, barriques e tonneaux francesi e americani.
